PureFlow™ is Watson & Son’s signature method for refining mānuka honey. Through a slow and carefully controlled process, we guide natural honey crystals into a silky, creamy texture while preserving the purity, potency and character of every batch.

It Starts with Raw Honey

Every jar of mānuka honey begins in its most natural form, crystallised and full of natural structure. A carefully selected batch becomes our seed honey, which is hand folded and gently brushed until the crystals transform into a smooth, velvety base. This delicate stage of the PureFlow™ process can take up to ten days to perfect.

The Seed Honey Method

Once perfected, the seed honey is gradually introduced into larger batches of mānuka honey. It acts as a natural guide, helping the honey’s crystals bond and smooth together. Instead of forcing the process mechanically, the PureFlow™ method allows the honey to develop slowly under careful control, creating its signature creamy texture.

The Perfect Silky Texture

Great mānuka honey should feel as exceptional as it tastes. If a batch isn’t ready to be jarred, we simply wait. Folding continues until the honey reaches its perfect silky consistency, a process that cannot be rushed and is key to the smooth texture and balanced flavour Watson & Son is known for.
